When mozzarella is heated to 60 °C (140 °F) and then stretched, the milk proteins line up. It is possible to peel strings or strips from the larger cheese. It is traditionally made by hand-pulling steamed sheep's cheese into strings and braiding them
The String Cheese Incident (SCI) is an American band from Crested Butte and Telluride, Colorado, formed in 1993. The band is composed of Michael Kang (acoustic/electric mandolin, electric guitar, and violin), Michael Travis (drums and percussion), Bill Nershi (acoustic guitar, lap steel guitar, and electric slide guitar), Kyle Hollingsworth (piano, organ, Rhodes, and accordion), and Keith Moseley (bass guitar), and, in 2004, Jason Hann (auxiliary percussion).
Studio album by The String Cheese Incident. One Step Closer is the seventh release and fifth studio album of Colorado-based jam band, The String Cheese Incident. Released in June 2005, and containing thirteen original tracks with guest songwriting collaborations, the album was produced by Malcolm Burn at a studio in Boulder, Colorado. One Step Closer was a return to the more roots-based music of earlier String Cheese Incident fare, while still retaining some of the pop sensibility of previous studio albums. It was also the first album to feature new member Jason Hann.

String Cheese also featured drummer John Maggi, who a year earlier had recorded an album with the band Iowa By The Sea, a group that also featured a young Michael Wood enroute to his commercially successful career as a replacement guitarist for the soft rock band America. So that’s the historical background for the band. I learned this while seeking the album out of curiosity after the ‘It’s A Beautiful Da. oday’ disc failed to capture my interest. I have to say that his record is quite a bit more progressive and interesting than that one as well.
